Begin at the local market, where the vast array of exotic produce and tropical aromas are a feast for the senses. Your guide leads you between vendors, checking items off your shopping list, as you pick up aromatic mangoes, fragrant coconuts, fresh seafood, and other local produce.

Next, head to the kitchen—under the auspices of a team of local Fijian women, chop, marinate, grate, and mix ingredients to recreate the country's most popular dishes. As pots bubble and steam away, take the chance to chat with the locals and learn about the different ingredients used in South Pacific cuisine. Once the meal is ready, take a seat—traditionally, Fijians sit on the floor and eat off a large mat.
